GLUTEN FREE CHOCOLATE CAKE AND CASHEW ICING

Made with garbanzo bean flour, this chocolate cake was not only delicious…it is loaded with protein, dietary fibre, and vitamins!

Although we didn’t make this cake from scratch, we wanted to share this mix because we were quite surprised how good it was considering it’s made from garbanzo bean flour.

On our initial healthy food haul we ended up getting a bunch of Bob’s Red Mill products which are all natural, and this cake mix was one of them. The idea of a whole cake being made of bean flour sounded really strange to me so I was compelled to give it a try. We topped it with some cashew icing and raspberries and voila! It was really moist and so delicious. This is a cake you don’t have to feel guilty about having a second slice.
