Kale & Quinoa Scramble - Key Ingredients

With a glass of green smoothie, this was a nutritious way to start my busy day and keep me full till the afternoon.

Kale & Quinoa Scramble


Servings: 3-4
1 tbsp unsalted butter
1 minced clove garlic
3 cups cooked quinoa
5 cups kale
3 eggs
1 tbsp grated lemon zest
1 tsp dried oregano
½ cup pine nuts
salt & pepper


In a large skillet, melt butter over medium heat. Add pine nuts and garlic; cook until browned. Add kale and lemon zest; cook for a few minutes until kale is wilted. In a small bowl, whisk eggs with salt, pepper, and oregano. Pour eggs over kale and scramble until cooked. Remove from heat and mix in quinoa.
