Smoked Salmon & Egg Broghies

At Metro the other day, my mom and I discovered something called a Broghie: a crispy bowl-shaped snack that you can fill with basically anything you want. Certain grocery stores make them fresh, right in house. They come in wheat or corn-based (for a gluten free alternative). They’re super low cal, fat, and carb, and sugar-free. Sounds pretty good to me!

Servings: 3
1 tbsp butter
1 minced clove garlic
1/4 red onion
4 eggs
1-2 handfuls of cherry tomatoes (cut in half)
salt & pepper
1 tbsp dried oregano
3 Broghies
roasted garlic and chili aioli (from Costco)
3 large pieces of smoked salmon


In a large frying pan, melt butter over medium heat. Add garlic and onion; cook until browned. In a small bowl, whisk eggs with salt, pepper, oregano, and tomatoes. Pour eggs into pan and scamble until cooked. Spread the aioli sauce evenly on top of the Broghies and place smoked salmon on top of the sauce. Top with the eggs and enjoy!

Note: The Broghies get soggy very quickly so it’s best to let the eggs cool a little bit before spooning them on top, and serve immediately!
