I came home today from a friend’s birthday party last night in Oshawa and I was in need of some warm deliciousness! Of course, my mom sensed this and had whipped up this yummy soup for lunch, all ready upon my arrival. Definitely hit the spot!

INGREDIENTS________________

Servings: 6
1 tbsp butter
3-4 celery stalks, chopped
3-4 leeks, thoroughly washed and chopped
2 tsp salt
1 tsp fresh ground pepper
3 garlic cloves
2 slivers chopped ginger
1 jalapeno, chopped
1 tsp dried thyme
1 tsp dried rosemary
3 dried bay leaves
4 medium yellow potatoes, small cubes
2 cups chicken or vegetable stock
4 cups water
2 cups milk
½ fresh lemon
¼ tsp lemon rind

DIRECTIONS___________________

Sauté celery and leeks in butter on medium heat for 5 minutes. Add salt, pepper, garlic, ginger, jalapeno, and herbs; sauté another 5 minutes. Add potatoes and sauté another 5 minutes. Add stock and water. Cover and simmer for 20 minutes. Puree with hand blender. Add milk; simmer for a few minutes. Just before serving, squeeze in fresh lemon and add lemon rind.
