A sweet and hearty orange soup!
This recipe was inspired by Butternut Stew with Tofu, Corn, and Pine Nuts, from the Vegetarian Times. Mostly because we didn’t have tofu, and it turned into more of a soup than a stew…
But delicious nonetheless! We used carrots to replace the tofu and to give it a nice crunch. We also added a jalapeno pepper and cilantro for some extra flavour.
